  • A tip from a cake maker with 50 years experience. When piping buttercream or anything that softens in your hand, soak thick kitchen paper in iced water, wring it out then wrap the chilled paper in 2 or 3 layers, firmly round the outside of the piping bag before you pipe. It won’t affect your grip and it keeps the piping medium chilled for much longer. You could also use thin muslin …. Trust me, it really works😀 Edit: make your own butter from double cream, it’s much whiter so you don’t need white food colour.

  • This is one of the most interesting and easy to follow cake decorating articles I have ever seen. Beautiful! If you are making them for someone’s wedding how would you store them until you can deliver them? Also, you asked for any suggestions. Years ago I worked in a school and one of the mums made a cake for a teacher for the beginning of the summer holidays It was absolutely amazing! She had cut away part of the cake and what was left intact became white cliffs. At the bottom of the clffs was sand and then the blue sea which was hard like glass and it had little white waves on it. She had made little figures of children in red and white striped and blue and white striped bathing suits playing in the sand making sand castles and they had tiny buckets and spades. There was even a little seagull. It was so beautiful and really too good to eat but it has stuck in my mind for 40 years! How she made any of it, especially that sea, is beyond me but I would love to see it re-created.

  • You did a beautiful job 👏 💜! My experience with the white gel food color is that too much changes the taste of my ABC (American butt….) frosting. A well-known cake artist from Global Sugar Art warned of the same thing. I don’t know if that is a result of the butter or shortening (I tend to use a combo of mostly butter and high ratio shortening), but I did not like the after taste so I try not to use too much of it.

Her sister is gluten intolerant and I was wondering how I could make a second cake and still ensure that there would be no cross contamination during the cutting and serving. You solved my problem. All the gluten free cake will be individually decorated cupcakes on a pretty stand so there is no cutting involved and no getting cake from the wrong recipe.

  • Well my 1st try and they are defo tricky ! I think not filling your bag with too much at a time is the trick as you need to use one hand to pipe & the other to hold .. too much icing in the bag makes it harder to control … I’m not giving up tho !   • I am a cook in a care home in England. I do a lot of home baking and created a few new baking or modified the recipes. I learn and still learning to to decorate a cake or cup cakes. It is a lot to learn, not just decorating the cake but all the different tips that create so many different shape. And buttercream frosting. Unfortunately for me, I cannot use butter all the time instead I hae to use margarine for frosting. Not the same as it have different taste and tend to be more softer but I found how to make it better for decorating. thank you so much

  • These are gorgeous. I love them. I do have a question about the amount of icing though. Is it common for people to eat this much icing with the cupcakes? Or do they just scrap a lot off before they eat the cupcake. I want to learn to do this because its so pretty, but I also might be heartbroken if I saw someone just scrap it away after one bite of icing. At the same time, I don’t think I could eat this much icing. So my question is:what do people do with this much icing? do they eat it or waste it?

  • Here’s an easy easy tip for you use a extra tall glass to put your Piping Bag in too it would make it a lot easier and faster and I don’t know if you know this either if you make any flowers ahead of time if you put them in the freezer on a square piece of parchment instead of putting them right on your cake so they don’t stick that’s a good way of doing it too that’s what my teacher told me to do and it works wonders

The buttercream recipes that I have tried are SO sweet. With all this frosting, I would think for them not to be too rich, you have a great frosting recipe that isn’t too sweet.   • I am so impressed, not only by your work but by the fact that you actually read all of your fans comments! I’ve NEVER had anyone read my questions or comments, they should stay humble bc you never know! So, I used to LOVE making shaped cakes by freezing them after baked, then using the thinnest knife to slice the bump off the top them cutting out shapes and using the icing as glue. I wld have requests but simple ones like for my 2 nieces birthday parties and such. One picked a spotted dog so I made him sitting on a huge platter, and with the extra cake and brown icing I used for the spots, I stenciled dog bones and put them all around the puppy. Thank God it looked good for her party! Then my boss was selling her hair salon and moving so I stenciled a pair of scissors and a comb…somehow I was able to make Grey icing for silver scissors…I think I had to keep re-freezing the cake so they wouldn’t crumble, being so intricate and thin! I started the idea from a book from Avon although I never did learn piping, and I REALLY want to! I’ve purchased many kits, lol. What is the most important advice about piping that you would give to a beginner? Also my main request for the center of an adult cake was my favorite, half peanut butter and half chocolate icing….mixed well and spread. If someone were to want custard, do I pipe around the outside of the cake b4 putting the custard/pudding in the middle? ( then usually I wld use a dinner plate to flip the top of the cake back on) I think the shapes on the ends of the pipettes always wound up frustrating me.
