A Recipe For Black Decorative Gel?

This recipe for a deep, dark buttercream frosting is made with simple ingredients such as granulated sugar, cornstarch, lemon juice, and water. To achieve the best black icing, it is important to use gel or powdered food coloring instead of liquid food coloring. The darkest black icing can be achieved by mixing 1-2 tablespoons of black cocoa powder with a few squirts of black gel food coloring.

To make the icing even darker and a true black, add a small amount of black food coloring to a spoon and add a drop of water to it. Watch as the base color appears. Scoop ¼ cup of finished buttercream into a microwavable bowl and add additional gel color, mixing until the frosting reaches the desired color.

Making black food coloring requires blue, green, and red food dyes. Buttercream icing and fondant are initially white, and using food coloring to change all colors can be done by mixing about 1 teaspoon of black gel color to one cup of icing. One combination includes equal parts of red, yellow, and blue, while another is by mixing blue and brown. If you run out of black food gel color, you can combine leftover icing.

In summary, making a deep black icing with simple ingredients is essential for creating a rich, creamy, and delicious frosting without causing bleed, taste, or dryness.

  • OMG! This came 2 days too late =O I needed black and wondered why I could only get a dark grey!!!!! Oh well. I know now =D Thinking this would be the same idea with colouring fondant!!! I made a Stormtrooper helmet and had to use dark grey where it was meant to be black, but against the white, only I noticed because I knew it =D

  • Black cocoa powder or Ultra Dutch processed cocoa powder means you need very little gel colour. And as you said, let it rest and the colour continues to deepen. For dark colours, I make them the day before, pop them in the fridge overnight, bring them to room temperature the following day, whip it up again and voila, super dark icing.

I used the Americolor brown coloring and I used wilton black gel paste..can you help me figure something out?

  • ahhhhh its so beautiful, black is the colour of my soul, its speaking to me!!! Every time I want to use black, my buttercream ends up too runny because I put to much black food colouring in there to get it black.
