Piping tips play a crucial role in creating unique designs for cakes and cookies. Star tips (Tip 21, 32, 1M, 4B, or 2D) can be used to create simple borders or rows of shells to accent or cover a cake. Experiment with different tips to create different effects, from simple lines to intricate patterns.
The shell is often the most popular piping technique, used for adding accents, making hearts and flowers, and as a border around the cake. Any star tip can be used to create unique designs. To get the classic shell look, use a star piping tip, such as a 32.
To pipe a ruffled “skirt” around the base of the cake, fit a decorating bag with a star tip and medium consistency icing. Squeeze hard, letting the icing fan out generously as it forces the tip up. Use a straight petal piping tip with the fatter end touching the cake.
Beads and beaded borders can be created using Ateco or Wilton tips 6 to 12, which are plain, round tips. For individual beads, hold the bag vertically just like in the spiral border technique.
Piping tip 10 is very versatile, with 12 different shapes, designs, and borders to create, including daisies, hearts, clouds, and more.
