Three pastry chefs shared their favorite grocery store cake mix, with Betty Crocker’s Super Moist Yellow Cake Mix being the clear winner. Despite the numerous options available on the shelves, a few big-name companies have dominated the boxed cake mix market for decades. The right cake as a base is crucial when sculpting a novelty cake, as it can be cut and manipulated without falling apart and has a soft crumb yet delicious.
To find the best boxed cake mix, try Pillsbury’s Moist Supreme, Duncan Hines’ Perfectly Moist, and Betty Crocker’s Super Moist versions of devil’s cake. Betty Crocker’s yellow cake mix produced a cake that felt familiar but pretty average, lightly sweet, without any striking flavors.
For best results, stick to name brand box mixes, such as Duncan Hines, but use melted butter instead of oil. A taste-test between Pillsbury’s Moist Supreme, Duncan Hines’ Perfectly Moist, and Betty Crocker’s Super Moist white cake mixes was conducted. Betty Crocker’s french vanilla cake mix is great for adding almond extract and layering with a berry filling.
To choose the right cake mix, try adding one box of vanilla pudding mix, not instant, and usually add a little more oil if adding vanilla pudding. Three pastry chefs all agreed that Betty Crocker’s Super Moist Yellow Cake Mix is the best option.

Professional bakeries use superior equipment, such as high-grade ovens, which have accurate temperatures and are digitally controlled, allowing bakers to make more accurate baking times and reduce the chances of over-baked or under-baked cakes. These ovens also distribute heat evenly, making cakes more uniform and preventing under-cooked or burnt parts from ruining the entire cake’s flavor and appearance.
While purchasing a high-spec oven may not be feasible for most home cooks, steps can be taken to mitigate the effects of subpar appliances. By identifying an oven’s hotspots, bakers can position the cake to make the best use of or avoid them. Additionally, home cooks can purchase digital oven thermometers that provide accurate temperature readings, eliminating the ambiguity inherent in many residential ovens. Overall, professional bakeries use superior equipment to ensure the best possible taste and appearance of their cakes.

M a homemade enthusiastic baker. Today i saw hundreds of cake mix on a amazon and saw so many people enjoying the pre mix cakes and they look so perfect and beautiful! It got me really sad and got me thinking should i really spend so much time and money in making cake from scratch??😢❤ Please tell me a good thing that let me continue baking like a real baker…
Thanks to you, MK, I had a hacking success with Duncan Hines Dolly Parton Yellow Cake Mix (18 oz). The directions called for milk already, so apart from following the directions I added 1 extra egg (5 total), 1/4 cup canola oil, 1 package Instant Vanilla Pudding Mix and 1/4 cup sour cream. I used 8″ aluminum cake rounds (3″ tall), parchment bottom and 3″ cake strips. This was my first hacking attempt, and the result was a moist, beautifully baked cake. I iced with my favorite canned buttercream frosting (it required 2 cans). It was delicious. Not because I ate them, but there weren’t any crumbs on the plate when I finished. I’ll be doing this again and next time I’ll make one of your frostings. Did I say it was an 18oz box mix? Not the shrinkflation size. It was about a 40 minute bake time at 350F.
Love your articles. I wanted to know why my Betty crocker super moist cake is raw in the middle despite following the box intructions (without even adding all the extras you suggested) Baked at 350 degrees for 40 min in a 7 inch pan. It rose to the top but completely raw in the middle. So extended it by another 20 min and still undercooked. Wanted to what I am doing wrong. Any suggestions???
I doubled the recipe (2 boxed cakes) the cake called for 2 eggs so 1 extra egg for each box was 6 eggs replaced the water with milk and added the melted butter with the oil. It was a total disaster! The cake was rubbery and eggy I had to throw it all out such a waste of ingredients. Be careful because this hack may not work with all boxed cakes and think twice about doubling the ingredients
