To pipe buttercream mums, use a stiff consistency icing, such as Italian Meringue Buttercream. This recipe is perfect for creating beautiful buttercream chrysanthemums on a textured frosted cake. To make the flower, you will need pastry tip 81 or 79, a pastry bag with coupler, and a circle cutter.
Frost the cupcake with a thin layer of buttercream, using two shades to create a realistic look. Cover the flower with the same leaves all the way or leave a small space in the center for the petals. Chef Alan Tetreault shows how to use petal and leaf tips to make buttercream flowers, showing step-by-step instructions for piping leaves, sweet peas, primroses, daisies, and chrysanthemums.
Both tip 80 and 81 are curved shaped tips, slightly different in size. This flower looks good in every color and has an amazing texture that makes it a great addition to any flower cake/cupcake. Pipe petals in rings around the center strands, holding the tip.
To pipe petals, use a Wilton 81 piping tip with a small c-shaped opening. Pipe petals in rings around the center strands, holding the tip. The piping tip should be the “U” shaped tip with a very small opening.
In summary, this recipe provides a simple and easy method for creating buttercream chrysanthemums on a textured frosted cake. By following these tips, you can create beautiful buttercream flowers that look great in every color.

Wow, you make really beautiful flowers and I had fun perusal this. However, I’m not sure the purpose of you making the article. I usually watch cake decorating and flower piping articles to learn from them. I also find them sort of relaxing! But, perusal your article made me feel like I was perusal an old silent movie…you know, they were so choppy and skipped frames? Kind of unsettling feeling to me. I am not trying or meaning to be mean or rude, I’m really not! But, in the description box, you say this is “step-by-step”, indicating you were intending to teach us something. For me, personally, I felt like MANY “steps” were missing, no info on what tip or frosting you were using, and not enough time to even really read the written instructions ALL presented a problem! Seemed as though this was just for entertainment purposes. As I said, you make beautiful flowers and I hope that you will consider slowing down and teaching us your talent and skill. I know I will certainly subscribe then.
