In this Piping Tips 101 guide and decorating tutorial, you will learn how to use piping bags and tips to create beautiful buttercream decorations. You will learn how to use Ateco tips 16 to 22 or Wilton tips 13 to 22, which are all open star tips. Hold the bag at a 45˚ angle to the cake just slightly above the surface. Begin pressing frosting out of the bag and allow it to accumulate at your starting point just enough so that it fans out on either side of the tip and builds up.

In this video, the author uses the Ateco 849, which is the largest closed star tip Ateco sells. For frosting cupcakes, you want the biggest piping tip you can use. The Ateco 846, Wilton 1F, and Wilton 2D are common piping nozzles and tips for closed star designs.

For individual beads, hold the bag vertically just above the cake surface. Squeeze out a small amount of buttercream, releasing pressure. Using a rotating cake stand or turntable allows you to spin the cake as you frost it, so you can easily smooth out any imperfections.

To change piping tips, simply unscrew the smaller plastic piece, swap out the tips, and screw the part back in place. A coupler set comes with this guide and decorating tutorial.

  • It’s not just pressure but truly the position of the tip relative to the surface and whatever is being piped. The mistake with the rosettes is that the tip is too close to the surface and it’s being dragged through the rosette itself. The round tip is a really good example of the common mistake of treating the surface as if it’s paper, piping bag as if it’s a pen, and the medium being piped as if it’s ink. The best description I remember from my beginner days for the round tip is to use steady pressure as if you’re producing a strand of soft spaghetti, and then using your whole arm to shape the drop of that strand.

  • Very helpful! As I watch you I realize my buttercream tends to be a bit too thick so I need to thin it out more. As far as the grass tip goes, I made some dinosaur cupcakes and was piping the grass the “wrong” way, so the blades of grass were quite limp…however, I explained that since dinosaurs were walking on it, they squashed the grass😜

  • OMG, this saved me from a full on meltdown yesterday when doing rosettes on a cake.
