I just use a couple of little pieces of artist putty to temporarily keep the board from sliding on the turntable, it can be used over and over, in fact I just leave it stuck to my metal turntable so it’s always ready when I need it, it holds everything tight and easily pulls away when I slide a spatula or knife under the board.

  • I love perusal your articles! It seems like everytime I smooth I leave a line .one part be smooth then it’s a Crack or line somewhere . I think I may have figured out my mistakes. I also forgot to let the cake layers thaw for a few minutes before frosting. I take them out the freezer and go straight to frosting not realizing that will make the frosting chill and make it harder to spread !   • Leveling the cakes before you start would help a lot with mistake number 15. Buttercream cakes should not NEED to be stored in the fridge. I agree with using the fridge briefly (15-30mins) to set the filled layers before crumb coating, and again after crumb coating before you add the final layer, but your buttercream (if using ABC) should crust over after being left out in contact with the air and the cake shouldn’t start to lean if its set properly. All sponges should be cut level before filling to remove any domes and for tall cakes you can also add a dowel through the centre. But refrigerating cakes only masks problems with stability. As soon as it reaches room temperature again it will start to fall if its not been set up right in first place.

  • I’ve had a night are today. Ended up baking 8 cakes. I started out with pink cake batter, great. I used tins, that look like the depth of yours in this article. A deep 6 inch tin. Well. The cakes took twice as long to bake, the edges/ half way inside the cake were overbaked. I cannot get used to these tins. So I made another 4 using sandwich tins, then cut out so that they looked like a 6 inch & 4 inch cake. But. I cut all the edges off, my frosting was too hard & everything I put a layer of frosting on it took the crumb off the cake & ruined it, so I couldn’t even frost the blinking thing properly. How am I supposed to bake with these tins! How do you frost if you’ve trimmed the cake! Good post thanks!
